MAKES 1 LOAF TARO SWEET BREAD
Taro 1 medium, peeled and cubed
Dry Yeast 1 Tbs
Lukewarm Water 1/8 cup
Bread Flour 3 1/2 cups
Salt 1 tsp
Eggs 2 large
Warm Milk 1/4 cup
Melted Butter 3 Tbs
Sugar 1/2 cup
1 BOIL the taro cubes in salted water until soft, about 15 minutes. Drain and mash.
2 COMBINE the yeast and warm water with a pinch of sugar and set aside.
3 BEAT the eggs, warm milk, sugar and melted butter together in a small bowl and set aside.
4 SIFT the flour and salt together in a large bowl. Add the yeast mixture and the egg mixture and stir until well blended. Knead the dough by hand until it is smooth and elastic.
5 PLACE the dough into a greased bowl and cover with a towel. Allow to rise until it has doubled in bulk, about 1 hour.
6 TURN the dough out onto a floured board and gently pat out into a rectangle. Spread the mashed taro over the dough then roll it up and place in a loaf tin, seam side down. Allow to rise again until double in size.
7 BAKE in a 350°F oven for 45 minutes, or until the loaf is golden and sounds hollow when tapped.
