CHEF MICHAEL AND NOBUYO STADTLANDER have created a dining experience on the edge of the Niagara Escarpment that is unquestionably the heart and soul of Canadian cuisine. Long before Noma or the French Laundry, they were quietly leading the way. Named one of the 10 best restaurants on earth in the 1990s, the experience has only gotten better.
They serve dinners during the late spring, summer and autumn, sometimes in the farmhouse where twisted driftwood reminds me of the summer we all spent on Quadra Island. BC. Candlelight reflects on the gilt-rimmed ceiling and the walls the colour of aged Pomerol… a shrine to dreams and beliefs and absolutely astounding dishes.
Often the dining moves into the resin-scented stillness of their forest or out into one of the wildflower-strewn meadows. They celebrate spring with a wild leek and maple festival and hold an always-sold-out Christmas Market.
