NOODLE KUGEL is a traditiona­l Jewish festive dish; a casserole of egg noodles bound with sour cream and cottage cheese, served in a sweet or savoury guise. It is usually baked in a square tin and portioned for serving. These individual kugels make for a fancier presentati­on, either as a side dish or, serving two per person with a salad or vegetables on the side, the main event. Deep browning of the onions in a generous amount of butter is key to developing flavour, so pay attention to this step and take your time. To lighten the dish, use low fat versions of the other dairy ingredient­s. The kugel mix can be made a day or two ahead and kept in the fridge until you are ready to fill the muffin tins and bake. The kugels are also good cold (great for a picnic!) and reheat well in the microwave.
