TOFU IS SUCHA versatile ingredient because it soaks up flavour like a sponge. It has a slightly nutty taste of its own and is a wonderful source of protein for those who are on a calorie- restricted diet. It's also packed with essential amino- acids, iron, calcium and other micro- nutrients. Soft, silken tofu is good for making dips, sauces and smoothies, while firm tofu can be sliced or cubed and stands up well to baking, frying or braising. While tofu is most popular in China ( where it originated) and Japan, it is used throughout the Southeast Asian countries in stir- fries and curries. Tofu also makes an excellent vegan substitute for the fresh cheese called paneer that is used in Indian vegetarian cuisine.
