Sweet Cheese Flan

It’s RaRe tO dIscOveR good food close to an airport, but the homey restaurant a quinta da atafone is steps away from the são Jorge runway. This was my dessert ahead of boarding a flight back to são Miguel. typically baked in a Bundt-style Portuguese flan pan, but any shallow cake pan will do.

Butter to grease pan

Sugar to coat pan

Eggs 8

Egg Yolks 4

Sugar 250 g

São Jorge Cheese1

125 g, grated

Cinnamon for sprinkling (optional)

Ground Almonds or Pistachios or Both for sprinkling (optional)

1 GREASE the bottom and sides of a flan pan generously with butter. Sprinkle sugar over the butter, turning the pan to coat.

2 IN a standing mixer, or by hand, beat the eggs, egg yolks and sugar until thick and pale in colour. Fold in grated cheese.

3 BAKE in preheated 350°F oven for about 20–30 minutes, or until custard is just-set.

4 WHEN cool, run knife around edges and invert onto a wide plate, allowing the caramel to pool around the pudding. Sprinkle with cinnamon and nuts if you wish. 1 In a pinch, you may substitute sharp cheddar, or Manchego.
