Bacon Fried Rice

Jasmine Rice 2 cups
Free Range Eggs 5
Sea Salt 2 tsp
Brown Sugar 1 1/2 tsp
White Pepper ½ tsp
Maple Syrup 2 tsp
Bacon diced, 1 cup
Chinese BBQ Pork chopped, 1 1/2 cups
Carrots diced, ¼ cup
Celery diced, ¼ cup
Green and Red Bell Peppers diced,
¼ cup total
Smoked Bacon Strips 8
1 COOK the jasmine rice in a rice cooker. Set aside and let cool down to room temperature.
2 BEAT one egg in a bowl. Set aside.
3 HEAT about 1 tablespoon of cooking oil in a wok over high heat. Add the beaten egg and fry for about 30 seconds.
4 ADD the rice and stir fry with the egg. Add sea salt and brown sugar to taste. Cook the rice until the egg is distributed evenly and the fried rice texture is dry, about 4 minutes. Remove from the wok and set aside.
5 COOK the bacon strips until crisp, glazing with the maple syrup. Set aside.
6 HEAT about 1 tablespoon of cooking oil in the wok over high heat. Add the diced bacon and barbecue pork and cook for 30 seconds. Add the carrots, bell peppers and celery and cook for another 30 seconds. Add the fried rice base and stir fry for another 3 minutes, until the bacon, pork and vegetables are evenly distributed.
7 DIVIDE the fried rice among four serving dishes. Top each with two bacon strips and a fried egg, cooked sunnyside up.
