Thai Tofu Stir-Fry
Firm Tofu
1 block, drained
Vegetable Oil 1 Tbs
Asian Sesame Oil 1 tsp
Green Onion 3, sliced, whites and green parts divided
Garlic
2 cloves, minced
Fresh Ginger thumb-sized piece, chopped
Sambal Oelek 3 Tbs
Red Bell Pepper 1, diced
Yellow Bell Pepper 1, diced
Thai Fish Sauce 1 Tbs
Soy Sauce 2 Tbs
Sugar 1 tsp
White Pepper 1 tsp
Water ¼ cup
Thai or Italian Basil Leaves 1/2 cup
Roasted Peanuts 2 Tbs
Steamed Rice for serving
Lime Wedges for serving
1 PAT the tofu dry with paper towel and cut into ½-inch cubes.
2 HEAT the vegetable oil and sesame oil in a wok or large skillet.
3 STIR- FRY the white part of the green onions, along with the garlic and ginger, until fragrant.
4 ADD the tofu and fry, undisturbed, until the base of the cubes is starting to brown, about 4–5 minutes. Gently toss the tofu and fry again until starting to brown.
5 ADD the sambal oelek and bell peppers and stir-fry until the peppers are just tender, about one minute.
6 ADD the soy sauce, fish sauce, sugar, pepper and water. Stir-fry to combine.
7 ADD the basil and peanuts and stir-fry briefly to combine.
8 SERVE immediately with steamed rice and lime wedges.
