WHAT’S THE OCCASION?

The big day has come and gone, but you might still have remnants of the big feast in your refrigerat­or. Repurposin­g the last of the leftovers into delicious, easy-to prepare dishes is simple. Leftover ham can be cubed and used to make salads, leftover root vegetables can be pureed with stock to make rich creamy soups and try our leftover turkey recipes to get rid of the remnants of your turkey dinner.

Leftover Turkey Sheppard’s Pie

6 Servings

Prep Time: Less than 30 minutes Total Time: Less than 1 hour

2 tbsp butter

1 small onion, diced

2 stalks celery, diced

2 carrots, diced

2 cloves garlic, minced

2 cups leftover turkey,

chopped

1 cup leftover carrots,

chopped

1 cup leftover broccoli,

chopped

1 tsp dried thyme

2 tsp dried rosemary

1 cup leftover gravy

2 cups mashed potato

1⁄2 cup Parmesan, grated

Fresh herbs, for garnish,

optional

Directions: Place butter, onion, celery and carrots in sauté pan. Set over medium-low heat. Saute until vegetables are soft. Add garlic and sauté. Add in leftover turkey, vegetables, herbs and gravy. Warm. Transfer to a baking dish. Mix mashed potato with Parmesan. Spread mashed potato over top. Place in oven preheated to 400ºf. Bake for 25 minutes. Garnish with fresh herbs if desired

Ultimate Leftover Turkey Sandwich

1 Serving

Prep Time: Less than 30 minutes Total Time: Less than 30 minutes

1⁄2 cup turkey, diced

1⁄4 cup leftover stuffing

2 tbsp leftover gravy

2 slices country bread

2 tbsp leftover

cranberry sauce

2 slices Swiss cheese

2 tbsp butter

Directions: Toss turkey, stuffing and gravy in a bowl and mix to combine. Spoon mixture onto a slice of bread. Drizzle with cranberry sauce. Add cheese slices and top with the second piece of bread. Place butter in sauté pan set over medium heat. Gently lower sandwich into pan. Press down on sandwich with another pan to weigh it down. After 2 to 3 minutes flip the sandwich and cook for another 2 to 3 minutes.
