CHOCOLATE ENERGY ORBS

Snacking isn’t often associated with clean or healthy eating, but an athlete who wants to keep their energy up can turn to a quick, tasty treat in order to do so. These energy orbs can be made ahead of time and stored for quick access for an athlete on the move. “An excellent snack option provides a source of carbohydra­tes and some protein,” said dietitian Billie Jane Hermosura, owner of Nutrition Intel. “Homemade energy orbs like these have carbs from the dates and protein from the nuts and nut butter.” – JARED CLINTON

INGREDIENT­S

1 cup almonds (or other nut) 3/4 cup shredded unsweetene­d coconut (plus 1/4 cup for rolling) 3 tbsp almond butter (or other nut butter) 2 tbsp cocoa powder 1 tbsp coconut oil Pinch of salt 15 medjool dates, pitted and roughly chopped

PREPARATIO­N

Put nuts in a food processor and pulse until roughly chopped. Add 3/4 cup of coconut and blend until a flour starts to form. Add nut butter, coconut oil, cocoa and a pinch of salt. Blend for a few seconds, then add pitted dates. Blend until combined into a sticky mixture. Using a tablespoon measure, spoon out mixture and roll into balls. Coat each ball in remaining shredded coconut. Place on parchment covered baking sheet, refrigerat­e until hardened. Store in the fridge in container or plastic bag for up to two weeks.
