Hodge Podge Nearly Fall

I know it’s not fall yet, but it’s right around the corner so to speak.

The mornings have already started to be chillier so here are some easy, quick to prepare, slow to cook recipes for your crock pot if you have one. And if you don’t they can still be cooked in a convention­al oven using a casserole or tin foil in a tray.

Sweet chicken and peppers

3-4 chicken breasts cubed 1 red pepper, chopped 1 can of pineapple

Sauce: 2 tsps of mined garlic 1-2 tsps of crushed red pepper flakes 2/3 cup of sugar 1 cup of water 2 tbls of sweet red chilli sauce ½ tsp of salt 4 tbls of cold water 2 tbls of cornstarch

First grease crock pot or casserole. Add the chicken and the pineapple.

Next, get a separate bowl and mix all of the other ingredient­s except the water and cornstarch, whisk it a little to combine. Add this sauce to the chicken.

Cook on high for 2-3 hours or on slow for 4-5 hours or in an oven at 350 for about 1 ½ hours checking from time to time.

10 mins before needed, mix the cornstarch into the water together and add to the chicken dish allow a few minutes to thicken, serve with boiled rice, serves approx. four

And who can resist pudding? This recipe does cheat a little using box cake mix, but it would be just as easy to make the crumble topping yourself, it would take longer though.

Apple spice cake

1 box white cake mix Betty Crocker 2 cans of apple pie filling 21oz each 1 stick of butter – melted 2 tsp ground cinnamon

Preheat oven to 350 degrees

Spray inside of casserole dish with nonstick cooking spray or grease with butter Poor both cans of Apple into the dish, spread out evenly.

Dust the apple with a light sprinkle of the cinnamon or to taste.

Next mix the melted butter with the cake mix until it becomes crumbly.

Sprinkle this crumb mix over the apples until covered.

Bake for approx. 30 mins – until hot and bubbly.

Serve with whipped cream or regular cream or even ice cream and there’s always custard.

Minimum amount of effort, maximum taste, enjoy.
