Hodge Podge Can’t get into it

Today I can’t seem to get started, I’ve been busy since I got up, it’s true, but I think my get up and go has got up and left. Yesterday was good and I achieved a lot, I made three loaves of bread, cookies, flapjacks, dog treats, I cleaned, tidied and vacuumed, changed sheets, did laundry. The whole nine yards. It’s just today I can’t get into, maybe I over did it yesterday. All I know is, I couldn’t pull the skin off a custard today, so I guess I’ll take it easy whilst I can and coast until tomorrow. That doesn’t mean I will be laying around though I will still have chores to do, oh yes and they will be done, just not as fast as usual.

Today I think I’ll utilize my slow cooker and make that easier too, it’s nice to almost take the night off and just come back to a hot meal without any fuss. One of the family’s favourites and easy too, is Garlic chicken, it’s nice served up with basmati rice or mashed potatoes, salad or steamed vegetables, even fries if you fancy them. Here’s the recipe:

Garlic chicken

For a largish slow cooker (4 quarts size ish)

2 chicken drumsticks per person (or 1 larger piece of chicken can be with or without bones).

1/2 a cup of ketchup.

1/3 a cup of honey.

1 teaspoon of garlic powder or 3 cloves of fresh garlic crushed.

1/3 cup of vinegar.

1/2 cup of soy sauce.

Method

Place chicken in bottom of slow cooker. Arrange evenly.

Next in a bowl or jug combine the rest of the ingredient­s and stir.

Poor over the chicken, making sure every piece has some poured on it.

I then add a little water maybe 2 cups and I put it on. Cook on low for 6 hours, serve with whatever you like, yummy, sticky and good, tastes great and is easy. I’m going to do ours with rice and a side salad. That leaves me free to do something else until later when all I have to do is cook the rice.

Pudding tonight could also be another easy one, like impossible coconut pie:-

Impossible coconut pie

2 cups of milk.

1 cup of flaked coconut.

1 teaspoon or vanilla essence/extract. 1/2 cup of all purpose flour, plus a little to dust your pie plate/dish.

6 tablespoon­s of margarine and a little to grease your dish.

3/4 cup of white sugar.

1/4 teaspoon of ground nutmeg.

Method

Place milk, coconut, eggs, flour, margarine and sugar in a blender, mix well. Pour into your greased and floured dish. Sprinkle with nutmeg if desired. Bake at 350F 175C for approx. 45 mins. Sometimes I serve this with ice cream, sometimes on its own.

Either way, comfort food. We don’t eat it all the time, but now and again, who doesn’t like a little extra comfort.
