Granny’s Cook book.

I love being a granny, it’s wonderful. To have our children visit and bring the grandchild­ren is fantastic. And I get to bake for the impending arrival, marvellous.

So, this time granny’s making anything cookies, cheap, cheerful and endless possibilit­ies .....

Anything cookies

2 1/4 cups of all purpose flour.

1 1/2 stick of butter or margarine (1/2 cup = 1 stick) 3/4’cup of brown sugar.

2/3 cup of white sugar.

1 teaspoon of baking powder.

2 large eggs.

1 teaspoon of vanilla essence.

In this recipe I’m using two granola bars, chopped up small.

Your choice of add- ins, like chocolate chips or nuts, raisins, crushed pretzels, chopped granola bars, glacé cherries, candies, lemon zest, orange zest, chopped candied peel anything you fancy, like I said the possibilit­ies are endless. It really depends on what you have in the house. This dough can even be baked without any add-ins and just be vanilla, or you could dip them in chocolate or ice them, even drizzle chocolate over them, it’s a wellbehave­d dough in my experience.

Method

Cream the butter and both the sugars, add the eggs one at a time and combine.

Start to add the flour a little at a time and mix well. I added the chopped granola bars about now and when all your flour has been added, you should have a thick dough. If it’s too thick add a very small amount of milk to ease the dough enough to make a dough ball and then roll into a sausage shape. Chill in the fridge for at least half an hour. When it’s cold and firm, take out the dough and cut it into circles with a sharp knife. Arrange the cookies on a baking sheet, I didn’t grease mine and they came off fine. Bake at 350 F for between 10 - 12 mins until golden brown underneath. Cool on a wire rack. I think they came out well and the boys loved them. There were a few more before this shot was taken, so I guess you could say it was a success and granny wins.
