Half way through the week and just after Easter, not able to dash out to the shops when I like I sometimes make this with the boys in mind. This meal is relatively fast for starving boys like ours, it’s cheesy and can be used as soon as its ready or you can take it a step further and add some cheese sauce or even a can of cheese soup to make this into a bigger meal adding more sausage and or ham or bacon.

This time I’m making it the simple way, something quick for lunch that’s tasty and fast like I said before, perfect for quick lunches.

It can be eaten cold too at picnics and I confess the boys do like it in a sandwich, but that’s boys for you. Sausage pasta

1lb Sausages, cooked and cut into rings any type you like or have on hand.

1 bag of pasta can be ordinary bog standard or whole grain or gluten free.

1 jar of mayonnaise or pasta sauce (whichever you prefer I’m using mayo today).

3 - 4 slices of either ham or cooked bacon.

Grated cheese to sprinkle on the top and stir into the mixture to taste.

Mixed herbs and parsley if liked. Method

Cook your pasta as per the packet instructio­ns. Drain and put back into the hot pan, but off the heat. Add the mayo and the rest of the ingredient­s, stir to combine, try not to break up the pasta so be a bit gentle with it. Now decide if you want to make it bigger by adding more ingredient­s if so do so now. place in the oven at 350F with cheese sprinkled on top and bake until starting to go golden brown.

If not and you’re doing the same as I am, once all the ingredient­s are together you can serve the dish, its good with bread or on its own. don’t forget to sprinkle some cheese over the top. Here’s a picture of mine all ready to serve. Sometimes I add a little ground black pepper and some powdered garlic to change it up a little.
