Apple crumble

Being lucky enough to be given a large amount of apples from our daughter and son in law (thank you ever so much) I’m naturally using them up as fast as I can and have been canning some, that was yesterday and then today I thought I’d make an apple crumble for a cozy pudding as it gets little colder in the evening after the sun has gone down. These transition days from summer to fall to winter can be messy and sometimes a bit chilly and catch you out, so I’ve already got out the cuddle blankets for the couch in the evening, just for comfort you understand, so here’s the pudding to go with a cozy night in.

Apple crumble

Crumble topping:

10 1/2 oz of all purpose flour

6oz of sugar can be all white, all brown or a mixture of both, depends what you have

7oz of butter (softened) or margarine if on a budget like I used

Filling:

1lb apples, (can be a mix of sweet and tart or what you have around the house) 2oz of sugar

1 tablespoon of cornstarch

1 pinch of ground cinnamon or pumpkin spice if you like the blend, (we do so I use that it saves measuring out al the other spices like nutmeg or cloves. It’s optional. Preheat your oven to 180C/350F gas mark 4 Method

Put the flour, sugar and butter into a bowl and break the marg or butter into pieces with a knife then start using your fingers, gradually rub the fat into the flour sugar mixture, when done the mix should resemble breadcrumb­s.et aside whilst you prepare the apples, cover with a tea towel.

Next, peel and core the apples, cut into wedges, place in a separate bowl. Once you’ve done them all like that add the cornstarch and the 2oz of sugar and the spice, stir it in to coat the fruit, try not to break the apple pieces. Now, depending on what your making your crumble in it could be a tin foil dish or a casserole dish or a baking tin whatever you’ve got, put the apple pieces in there, even them out and then start pouring the crumble mixture over the top of the fruit, cover the fruit completely. I do tend to stand the dish on a baking tray, because for the simple reason I’ve had a crumble or two boil over the apple juice into the bottom of my oven, it makes smoke and spoils everything, so listen to granny in this one please, forewarned is forearmed. Bake your crumble in your preheated oven until the top starts to go a bit brown, crumble is really good with cream or custard or ice cream, custard is our family favourite, so I guess I’ll be making that next.
