Father’s Day cookout

With Father’s Day just around the corner, it’s time to gather up some favourite recipes for a special cookout for dad. After all, a good hearty meal can show him how appreciate­d he is by the whole family.

So, what doesn’t say spoiled other than breakfast in bed? Start the day off with a surprise breakfast or brunch! Bacon and eggs are a classic but you could also treat Dad to a lovely pancake or waffle bar. Prepare an assortment of fresh fruit, coconut chips, dark chocolate chunks and toasted walnuts. The whole family can enjoy delicious pancakes with all his favourite toppings. If he prefers something savoury, try a twist on bacon and eggs by wrapping some asparagus with few slices of bacon. Served with a nice cup of hot coffee and dad will be

sure to feel special.

Later in the day, plan to fire up the grill! Choose from burgers, grilled chicken or marinated beef kebabs – or the all-time favourite Father’s Day meal, the

ever-so-simple grilled steak and potatoes. Jazz up Dad’s plate with some grilled corn on the cob and grilled vegetables. Or reimagine these ingredient­s as a salad in the recipe below, which

uses the new PC Green Goddess dressing highlighti­ng the bright flavours of tarragon and basil, tangy sour cream and lemon juice. Corn, fingerling potatoes, spinach and grape tomatoes all contribute to this colourful, tasty and nutritious option for dad that the whole family will also love!

Remember, the key step to achieving the juiciest possible steak is letting it rest for at least 10 minutes before slicing – this allows the juices to settle back into the centre of the steak.
