Get a head start on brekkie

Three tasty make-ahead ideas to fuel a busy day

- ATCO BLUE FLAME KITCHEN

Did you set a goal to get healthy or eat better this year? Breakfast may be a good place to start.

With our busy lifestyles, breakfast is often skipped or relegated to simply coffee and a pastry — hardly enough to fuel a full day. Get ahead of the game with these three tasty, make-ahead ideas:

Our Coconut Almond Granola with Flaxseed makes a tasty topping for yogurt, porridge, or on its own with a splash of milk. If you’d prefer, swap in your favourite nuts, seeds and dried fruit. This recipe doubles easily, so you can share with family and friends.

It’s not too late to jump on the overnight oats craze. In our Chia and Coconut Overnight Oats, the oats are soaked in a mixture of plain Greek yogurt and apple juice for sweetness.

The chia seeds help to thicken the mixture, as well as provide extra fibre. For additional toppings, we’ve chosen coconut, raisins, cinnamon and brown sugar, but feel free to swap in your favourite add-ins.

If you prefer a savoury breakfast, try our Denver Breakfast Muffins, a cornbread muffin filled with ham, cheddar and green onion. They will last in the fridge for two days, or in the freezer for several weeks. Calgary-based ATCO Blue Flame Kitchen has been providing advice on food, cooking, recipes and other household topics for more than 80 years. Their cookbooks include Everyday Delicious and From the Grill.
