Rhubarb is a natural backyard superfood
Rhubarb is perhaps one of the most under-rated fruits. In fact, did you know that rhubarb is actually considered a vegetable? This makes it even more amazing; I’m always looking for more ways to get veggies in to my family’s diet. From a nutritional standpoint, rhubarb is a bit of a backyard super food. You’ll be hard-pressed to find a neighbor who doesn’t have rhubarb growing in their backyard.
And what makes rhubarb a super food? It’s high in fibre, making it great for digestion and constipation. Rhubarb is also surprisingly high in calcium and vitamin K, so it’s great for healthy bones and brain function.
These rhubarb pistachio muffins aren’t too sweet, they’re the perfect breakfast or mid-day snack.
High in fibre, healthy fats, and protein, you’ll feel super satisfied.
If you can’t tolerate gluten-free oats, you might try brown rice flour instead. And if you’re a fan of nuts in your muffins, try stirring an extra 1/3 cup of pistachios in to the batter.
Rhubarb Pistachio Muffins
1 ½ cups certified gluten-free oat flour ½ cup tapioca flour 2 ½ teaspoons baking powder ½ teaspoon baking soda 1 teaspoon cinnamon ¾ cup granulated sugar (I used coconut sugar), plus 1 tablespoon for sprinkling ½ teaspoon sea salt 1 cup plain, unsweetened yogurt (dairy-free is fine) ½ cup coconut oil, liquefied 1 egg 1 tablespoon ground chia seeds 1 teaspoon vanilla 1 ¼ cups chopped rhubarb 1/3 cup chopped pistachios Preheat the oven to 400°F. Line a 12-cup muffin tin with baking cups.
In a large mixing bowl, combine the oat flour, tapioca flour, baking powder, baking soda, cinnamon, sugar, and sea salt. Whisk to combine.
In a medium bowl, whisk together the yogurt, melted coconut oil, egg, chia seeds, and vanilla until smooth.
Stir in rhubarb and let this mixture sit for 15-20 minutes.
Stir the yogurt mixture into the dry ingredients until the batter comes together.
Divide the batter among the muffin cups.
Sprinkle each muffin with sugar and pistachios.
Bake the muffins until they’re golden brown, and a pick inserted in the center comes out clean, 18 to 22 minutes.
Transfer to a rack and let the muffins cool in the pan for 5 to 10 minutes.
