Score a healthy treat for this year’s Super Bowl

This tasty dip is cheesy without any cheese

Nothing can stop us from enjoying our favorite Super Bowl snacks this weekend! We might not be gathering with our usual group of friends, but we can still make the best of it. And that means we will need some extra delicious Super Bowl eats!

This healthy dip is one of our family favorites! And it’s super simple. If you’ve never made a cashew-based sauce, you must!

Dairy lovers and dairy avoiders will enjoy it, regardless of which team they’re cheering for.

Super Bowl Dip

A healthy and delicious twolayer dip for the Super Bowl with a no-cheese cheese sauce.

1 cup soaked, drained and rinsed cashews

1 cup peeled and chopped sweet potato, cook till soft (reserve cooking water)

3 tablespoon­s nutritiona­l yeast juice of half a lemon (2 tablespoon­s)

1⁄2 teaspoon cumin

1⁄2 teaspoon chili powder

1⁄2 teaspoon sea salt

1 clove garlic

1 tablespoon olive oil

1⁄4 cup water (reserved from cooked sweet potatoes)

1. Soak raw cashews in water with a pinch of sea salt for 2-4 hours.

2. Cook sweet potato in boiling water till soft.

3. Drain and rinse cashews and add to a high-speed blender.

4. Add all remaining ingredient­s and blend till smooth and creamy.

5. Set aside while you make the Black Bean Filling.

Black bean filling

1 can black beans, drained and rinsed

1⁄2 cup salsa 1⁄2 teaspoon ground cumin a squeeze of lime juice 2 tablespoon­s finely chopped cilantro

1. Combine all ingredient­s in a blender or food processor.

2. Heat till warm.

Step One: Make the NoCheese Cheese Sauce (recipe above).

Step Two: Make the Black Bean Filling (recipe above).

Step Three: Add warmed Black Bean Filling to an 8x8 oven safe dish.

Top with No-Cheese Cheese Sauce. Bake at 350 degrees for 10 minutes.

Step Four: Enjoy with your favorite tortilla chips or crackers.

We like to serve ours with quesadilla­s, too.
