Health food gets delicious makeover

Think healthy eating means green juice and chicken breast? Think again. With the proper ingredient­s and techniques, eating well can be simple, colourful and tasty.

Our Spicy Lemon Halibut is prepared on the grill, making it an excellent dish for summer. The simple marinade of onion, lemon juice, white wine, hot sauce and thyme gives the fish plenty of flavour.

While the fish is marinating, make our Quinoa Pilaf With Vegetables. This is not your typical kale and quinoa salad! The pilaf is packed with colourful vegetables and finished with toasted pine nuts, with acidity and brightness from a hit of lemon zest and juice.

For a simple side dish, try our Grilled Tomatoes With Rosemary. Like the halibut, halved Roma tomatoes “marinate” in a mixture of fresh rosemary, green onion, lemon and olive oil (hint: pick a nice olive oil to really allow the flavours to shine!), before being cooked directly on the grill. Depending on the thickness of your fish, you can prepare both at the same time.

Of course, you can’t forget dessert!

Keep things simple and light with some fresh fruit and yogurt for dipping, or go ahead and end the meal with something more indulgent.
