4 kid-friendly recipes for back to school

- ATCO BLUE FLAME KITCHEN

Back-to-school season is here! Whether you’re a seasoned lunch packer or sending the little ones off for the first time, it never hurts to have a few more ideas in your back pocket.

Our No-Bake Fruit and Nut Granola Bars are an easy, sweet treat that’s perfect for an afternoon pick-me-up. If your child’s school has a nut-free policy, swap out the peanuts for sunflower seeds or pumpkin seeds for a snack that they can pack.

Our Basic Potato Salad is a classic favourite. We like adding extra vegetables, like shredded carrot, or chopped pickle for a pop of colour, crunch and flavour.

Our Turkey Caesar Wraps are so easy, you can still whip them up amidst the chaos of a school morning. The turkey can be easily replaced with leftover cooked chicken. Cut the wraps into bitesized “sushi” rolls for smaller hands. Add an ice pack to the insulated lunch bag to keep the salad and wraps cold.

For a quick breakfast idea or energizing after-school snack, try our Mango Banana Smoothie. Since mango season is short, you can use frozen mangoes or any other frozen fruit – just omit the ice cubes. ATCO Blue Flame Kitchen’s column on healthy eating for busy families runs Wednesdays in the Calgary Herald’s food section. Look for our From Our Roots cookbook in stores and online.
