Each Monday this month, I’ve featured a sampling of the many mouth-watering maple recipes I received during last month’s maple contest. Here are a few more:

MAPLE CORN BREAD

11/3 cup flour

4 tsp baking powder

1/2 tsp salt

2/3 cup cornmeal

2/3 cup milk

1/3 cup maple syrup

1/4 cup melted butter

2 eggs lightly beaten

1/4 cup maple syrup

1/2 chopped nuts, if desired. Stir flour, baking powder and salt into mixing bowl. Stir in cornmeal with a fork. Combine milk, 1/3 c maple syrup, butter and eggs and add to dry ingredient­s. Stir just to blend. Spoon into greased 9” pan and spread evenly. Drizzle remaining 1/4 cup maple syrup over batter and sprinkle with nuts if desired. Bake at 375 for 25 minutes. Serve warm. BAKED MAPLE SYRUP PORK CHOPS

1/2 teaspoon salt

1/2 teaspoon paprika

1/4 teaspoon ground cumin 1/4 teaspoon ground cinnamon

2 large or 4 small pork loin pork chops ( bone-in ) 1-1/2 teaspoons butter, melted 1-1/2 teaspoons Dijon mustard 1 tablespoon maple syrup

Combine the first 4 ingredient­s and rub over pork chops. Place in a greased baking dish. Bake uncovered at 425 degrees for 20 minutes. Combine remaining ingredient­s and pour over pork chops and bake an additional 10-15 minutes •••

And Connie Mccardle from Hampton, P.E.I., has the final work: “Hi, Cindy, this recipe will make the best baked beans ever, simply by adding maple syrup at the end.”

MAPLE SYRUP BAKED BEANS

(Serves 6-8 or more and they freeze well)

2 pounds (1Kg) dried navy beans (small ones)

1/2 cup (25 ml ) molasses 1 Tbsp (15ml) plus 1 tsp (5ml) dry mustard

1/2 cup (125 ml) brown sugar, packed

4 whole plum tomatoes (canned) crushed ( I freeze the rest for next time )

2 bay leaves

1 Tbsp. (15 ml) plus 1tsp (5ml) salt

1/2 tsp pepper

2 tbsp (25 ml ) Worcesters­hire sauce

1 very large onion peeled and chopped

8 or 10 slices of bacon (optional)

1/2 cup maple syrup (goes in later)

Soak beans overnight in cold water, drain, rinse and discard water.

Preheat oven to 300 F (150C)

In a small saucepan combine molasses, mustard, brown sugar, tomatoes, bay leaf, salt, pepper, Worcesters­hire sauce, and 5 cups of water.

Bring to boil and whisk until sugar is dissolved.

Chop onion and place in the bottom of bean crock or heavy Dutch oven.

Transfer soaked beans to crock or pot then pour in molasses mixture.

Stir, then spread the bacon, if using, over the top, cover with a lid.

The liquid should cover beans by 1/2 inch, add more water when needed, don’t let them dry out.

Bake without stirring for about 5 to 6 hours or until beans are tender. (remove bay leaf)

In the last 1/2 hour of cooking add the 1/2 cup of maple syrup and season with salt and pepper if necessary.
