Breakfast bowls in bed for Mother’s Day

One more sleep! You have your plan ready to roll out, right?

If your inner brain is reading this and wondering what I’m talking about … tomorrow is Mother’s Day. Insert colourful language here.

Yup, I just saved at least a few lives. You’re welcome!

Deep breaths. You still have time to put something together. Is there anything better than a delicious homemade breakfast in bed?

OK, well maybe there’s a few things, but what Mom out there would say no to a leisurely day in bed and being tended too? No one I know of. That’s for sure. Give your Mom a day to do whatever her little heart desires. That could mean a day of doing absolutely nothing, and that’s ok.

I have an idea for you that involves a little prep, little to no kitchen skills and a big side of love. It’s called a breakfast bowl. I know the title sounds plain but it’s packed with a whole lotta flavour and looks great.

There are so many recipes for breakfast bowls. There’s everything from Mexican breakfast bowls with chorizo sausage, black beans, onion, egg, avocado, veggies, sour cream, hot sauce and sweet potato. Or how about a sweet potato and avocado breakfast bowl with sweet potato, onion, peppers, cherry tomatoes, scallions, avocado, egg and paprika?

Then, there’s the traditiona­l breakfast bowl. This recipe calls for homemade potato hash browns, roasted onion and pepper, turkey bacon, cheddar cheese, scrambled egg and a sprinkle of parsley. This recipe is so tasty that you’ll have a hard time not eating it yourself. Absolutely delicious.

If you can’t think if how these ingredient­s would work together. Think of an omelet but with all the ingredient­s layered on top of each other while sitting on a potato base. Make sense?

Don’t forget, presentati­on is everything even when plating a simple of recipe like a breakfast bowl. Put a hefty layer of your homemade potato hash browns down as your base, top that with your roasted peppers, onions, turkey bacon, then your scrambled eggs, cheese, and sprinkle of spice.

You should end up with a pyramid shape. Not only is this delicious, it’s pleasing to the eye. How can she not love your work of art? Moms are always filled with the best lines and make you feel like you made the best thing ever in the entire world, “Oh my gracious, I love it. This is the best breakfast I have ever had.”

That’s what make Moms so special. They give you all the love. The thing is, she doesn’t have to pretend with this recipe. It’s truly that good.

— Motherhood Who says breakfast can’t be for lunch or supper? Not only are breakfast bowls a great idea for Mother’s Day, they’re also great to make ahead for a crazy weekday breakfast, lunch and supper. Take all your contents and layer them in your containers, seal them up for an easy grab and go. When you’re ready to eat, place it in the microwave for one minute, stir it up a little and place it in again for another 30 to 45 seconds and you should be good to go!

But first, before you think about any of that, let’s make sure we get Mom covered first. No matter what recipe you decide to go with, I’m sure she’ll gobble it up in no time. Especially when it’s topped with the best ingredient she could ever ask for — love.

If you’re worried about not having enough time to make this the morning of Mother’s Day, don’t fret, this is a great recipe to make the day before. Pre-planning is always key.
