Strawberry cake a good way to fly our colours to help mark Canada 150

HAPPY BIRTHDAY, CANADA – 150 years young! Patriotic flags, signs and, for our shop, red and white icing is showing up all over the downtown core. The spirit of our community is shining.

Goods Auto and the Ear and Hearing Clinic have really done a great job spicing up downtown Elmira. Beyond Canada Day, they always do a fabulous job dressing up their building and showing the pride they share for their community – it’s important to keep the downtown vibrant and shiny as new developmen­ts come in. As retail options sprawl across Arthur Street the downtown core needs a friendly enticing atmosphere to keep people visiting and willing to search for parking.

Canada Day celebrates all things Canadian. That’s especially true this year. The red-and-white strawberry shortcake is a perfect dessert for your dinner or lunch. Enjoy the long weekend with your friends and family! Happy cooking!

Berry Shortcake

4 cups all-purpose flour 2 Tbsp. baking powder 1 tsp. sea salt 6 Tbsp. of sugar 3/4 cup butter 1-1/2 cups whipping cream 2 tsp. of vanilla Berries: 1 pint local strawberri­es 3 leaves mint, chopped 2 Tbsp. maple syrup Whipped cream: 1-1/2 cups whipping cream 2 Tbsp. sugar 1 tsp. vanilla

Sift all dry ingredient­s together in a bowl.

Cut in butter until crumbly, add 35% cream with vanilla and mix until combined, try not to over mix .

Scoop dough with an ice cream scoop , 6oz works well for dessert

Bake in 350 F oven until a wooden pick comes out clean and the dough is fully baked. Allow to cool.

Slice berries and drizzle with maple syrup and chopped mint. Whip cream until soft peaks with sugar and vanilla.

Slice shortcake biscuits in half and fill the bottom with strawberry jam the layer berries and whipped cream, place the top on.
