Candy doesn’t have to be just for kids this Halloween

- Ricardo

At Ricardo, Halloween isn’t just for kids: The whole office dresses up — Brigitte and I included. We love the costumes, carving pumpkins, giving out candy and thinking up fun, family-friendly recipes. This marbled mousse dessert is guaranteed to get everyone into the spooky spirit (with very little effort). All you need is some frozen berries, whipping cream, sugar, Greek yogurt and a fail-proof Halloween trick — crushed orange and red lollipops, which I put inside and on top of this dessert. Why should the kids get all the candy? Happy Halloween!

Berry and Candy Marbled Mousse

3 Ricardo Tested 1 cup (125 g) mixed frozen berries, thawed 4 red or orange lollipops 3/4 cup (180 ml) 35% whipping cream 1 tbsp sugar 3/4 cup (180 ml) strawberry Greek yogurt

Place berries in a bowl and, using a fork, mash them slightly.

Place lollipops is a sealable plastic bag.

Using a rolling pin, crush the candy. Set aside.

In a bowl, whip cream and sugar with an electric mixer until stiff peaks form. Using a spatula, gently fold in berries, broken lollipops and yogurt.

Spoon mousse into small bowls. Garnish with extra pieces of candy, if desired. Serve immediately so that candy remains crunchy.

Makes 4 servings. Note: If you’ve eaten all your red and orange lollipops, use the leftover candy of your choice. This recipe is a cool new take on an old British dessert called Raspberry Fool.
