A complete dinner in one bowl

Today’s recipe offers a full meal in one bowl.

And it is a mouthful of flavours with roasted chicken, tomatoes, jalapenos, black beans, corn and fresh cilantro.

The spices of cumin, smoked paprika, chili powder provide the heat. The sour cream and shredded cheese offer the contrastin­g cool flavours.

The toasted tortillas provide the crunch and I found myself snacking on them.

Fresh avocado slices would be a great addition as a garnish but make sure it’s soft.

Chicken tortilla soup

3 chicken breasts, skinless, boneless 2 mL (half a teaspoon) cumin 2 mL (half a teaspoon) garlic powder 2 mL (half a teaspoon) smoked paprika 5 mL (1 teaspoon) chili powder 15 mL (1 tablespoon) olive oil 30 mL (2 tablespoon­s) olive oil, second amount 1 onion, diced 1 jalapeño, remove seeds and dice 3 garlic cloves, chopped 114-ounce can, diced tomatoes 114-ounce can, black beans, drained 15 mL (1 tablespoon) lime juice 375 mL (1 ½ cups) frozen corn 15 mL (1 tablespoon) chili powder 2 mL (half a teaspoon) cumin Salt and pepper to taste 1 litre (4 cups) chicken broth 60 mL (4 tablespoon­s) cilantro, chopped Monterey Jack cheese, shredded

Sour cream

Tortilla strips (5 tortilla strips, cut into strips, 2 tablespoon­s olive oil, salt to taste, bake for 15 minutes at 350 F) Cooking chicken: In bowl mix the spices with the chicken. Add the cumin, garlic powder, chili powder, smoked paprika and olive oil and rub into the chicken. Bake at about 350 F for about 20 to 25 minutes. In a large pot, heat the second amount of olive oil. Fry the onion until soft. Add the diced jalapeño and fry. Add the garlic and fry about 2 to 3 minutes Add the tomatoes, black beans, lime juice, chili powder, cumin, salt and pepper and chicken broth. Once the chicken is cooked, remove from the oven and shred. Add the chicken to the soup. Add the chopped cilantro. Stir and let simmer for 5 minutes. Ladle into bowls. Place a dollop of sour cream in the middle and put a few pieces of toasted tortilla on top of the soup. Sprinkle shredded Monterey Jack cheese.
