Quick quesadilla­s are a simple, kid-friendly option for the lunch box

OATMEAL AND WHITE CHOCOLATE CHIP COOKIES

Makes: about 5 dozen

2 cups (500 mL) flour

1 1/2 cups (375 mL) old-fashioned ■ rolled oats

1 tsp (5 mL) baking powder ■ 1 tsp (5 mL) baking soda ■

1 tsp (5 mL) salt ■

1 cup (250 mL) butter, softened ■ 1 cup (250 mL) sugar ■

1 cup (250 mL) packed golden ■ brown sugar

2eggs ■

2 tsp (10 mL) vanilla ■ 2 cups (500 mL) white chocolate ■ chips

1 cup (250 mL) chopped pecans ■ or walnuts

1. Combine flour, oats, baking powder, baking soda and salt in a bowl; set aside.

2. Using medium speed of an electric mixer, beat together butter, sugar and brown sugar until fluffy.

3. Beat in eggs, one at a time, until blended. Beat in vanilla. Stir in flour mixture just until blended. Stir in white chocolate chips and pecans.

4. Drop 1 tbsp (15 mL) measures of dough 2 inches (5 cm) apart onto greased cookie sheets.

5. Bake at 350 F (175 C) for 12-14 minutes or until light golden brown around edges. Let cookies stand for 1 minute on cookie sheets. Remove from cookie sheets and cool cookies on racks. Store in an airtight container for up to 4 days. May be frozen.

For nut-free schools, the pecans or walnuts can be omitted, or replaced with sunflower seeds. This recipe can be halved to feed a smaller crowd.

Serve them with salsa, guacamole and/or sour cream.
