“What’s for dinner?” is a common refrain in many homes. Get out of your dinner rut with these recipes that pack a flavour punch. A common misconcept­ion is that flavour takes time. Our Cuban black beans and rice prove you can get a tasty dinner on the table in less than 30 minutes. Canned black beans are simmered in an aromatic mixture of herbs and spices for just 15 minutes, and served on top of colourful savoury rice. Fish is one of the quickest dishes to make, and storebough­t salsa makes our spicy baked fish a cinch. Try serving in warm tortillas for soft fish tacos.

Pork tenderloin cooks up quickly enough for a weeknight meal, while looking just as impressive as a Sunday supper. A quick coat of dried rosemary, thyme, paprika, garlic powder, salt and pepper adds instant flavour in our herb and garlic baked pork tenderloin. SPICY BAKED FISH

Serves: 4 1 cup (250 mL) mild or medium salsa

1 green onion, sliced

1/3 cup (80 mL) chopped green bell pepper

2 tbsp (30 mL) chopped fresh parsley

1 tbsp (15 mL) red wine vinegar Dash of pepper

1 lb (454 g) cod fillets 1. Combine all ingredient­s except cod fillets. Place fish in a shallow casserole dish; spoon sauce over top.

2. Bake at 425 F (220 C) for 20 minutes or until fish flakes easily with a fork.
