TO MAKE PERFECT MERINGUE, TAKE CHILL OFF EGG WHITES

Q I simply cannot make meringue. I am trying to make a topping for a lemon pie, but the meringue will not whip. I am frustrated and ready to ditch the entire dessert. Help!

A When this happened to me (she often says), I finally figured out that the eggs should be at room temperatur­e. That is the most important step when whipping egg whites. The other secret is to add one-quarter teaspoon cream of tartar (per two eggs) before whipping. This step will help stabilize the eggs. Lastly, you will increase your chances of success if you make meringue on a dry, sunny day because humidity can also affect the result.

Q I am so tired of the new grocery store rules. I am excited to go back to walk in any direction

I please, instead of walking around the entire aisle just because I forgot something. I never know how to greet people, or if I should say hello to acquaintan­ces. Grocery stores don’t want me to bring my own bags from home, but I refuse to use plastic bags. Any advice?

A While it is a big change, it is reassuring to know that we are all in this together. Practising safe distancing and taking extra precaution­s is new to all of us. I understand your frustratio­n and that you would like to opt to care for the planet. However, it is important to consider the safety of yourself as well as the store employees and other consumers. I am grateful that stores are open, and I encourage absolutely every person to take a moment to thank the people who serve us.

Q I often hear people talk about straining food using a cheeseclot­h. What is a cheeseclot­h used for?

A People who make their own cheese use cheeseclot­h to remove whey from cheese curds. Before using a new cheeseclot­h, rinse it to remove dust and debris. A cheeseclot­h is also handy for clarifying stocks, making yogurt, bundling herbs for dropping into soup stock and for making tofu.

Q Now that it’s summer, I am looking for the best way to prevent ants from getting in the house.

A Begin by finding out where the ants are getting in. Do you need to seal doors or windows? Are there cracks in the foundation that need repair? Ants are attracted to food and so if you own pets and pet food sits out all day or their food is stored in open containers, chances are that you will have ants.

One very simple trick for homeowners without pets is to make a solution of what I call “Ant Away.” Combine one cup of borax and two tablespoon­s of icing sugar in a bowl or shaker. Place the container in areas away from pets, kids and hungry neighbours because borax is toxic if ingested.

If your ant problem continues, spray ant killer or call exterminat­ors before the problem gets out of hand.
