THE SWEET: BUTTER TARTS
An Ontario staple at farmers markets and local mom-and-pop bakeries – Kawarthas Northumberland’s cottage country even has a self-guided butter tart tour ( www. buttertarttour.ca) while Wellington County, an area north of Guelph that includes Arthur, Elora and Orangeville, features its trademarked Butter Tart Trail ( www. wellington.ca) – this sweet bite is equal parts gooey and flaky. Recipes are handed down from generation to generation – and closely guarded. The biggest debate? Raisins or no raisins? The jury’s still out. But in a creative twist, chef Kyla Eaglesham of Toronto spikes hers with maple syrup. How very Canadian, indeed.
