Cantarias Lodge, Puyehue, Chile.
On the side of highway 215, the road that leads travelers to the Cardenal Samoré border crossing with Argentina, lies Cantaria Lodge. Clothed in native woods and with impeccable geometry, this tourism and gastronomic destination opened in early 2013 and it is in a class by itself in the Puyehue area.
As a lodge, they offer several activities for adventurers and outdoor lovers, including fly fishing, kayak, hiking, trekking, ski and snowboard, all within the stunning environment in which the leading roles are played by the lake and Cordón del Caulle, a volcanic system that erupted in 2011 and altering the physical landscape here.
Still, what most sets Cantarias Lodge apart is its restaurant. There is a large grill, simple decorations that evoke southern Chile's roots, and a chef who understands and combines naturally the ingredients typically used by the people who live in this region to form a flavorful and, above all, cozy experience.
For starters, exquisite homemade breads prepared with different flours and seeds arrive warm at the table to be smeared with a soft chickpea hummus - a simple and delicious appetizer. And Cantarias Lodges pays attention to details. Each plate is decorated with a local flower or fern, little hints that remind you that you are in the middle of a native forest surrounded by native pellin, hualle and arrayan trees.
The restaurant is constantly changing its menu to provide new offerings, with fresh ingredients a guiding imperative. The honey and sesame glazed salmon accompanied by mushroom risotto is fascinating both to the eye and the palate. The ulmo honey that is so characteristic of this region merges perfectly with this fish. Overall, the most appealing dishes on the menu feature different fish (salmon, trout, and southern hake), but there is also beef, Patagonia's emblematic, star main course.
Sometimes the chef even invites guests into his kitchen to help him prepare the order; a fun and different experience for the curious ones who are looking to develop their culinary gifts.
In addition to the restaurant, on the ground floor is the bar made from a tree trunk, colorful Chilote wool looms and a chimney made from volcanic rocks. It's the kind of atmosphere that makes drinking an aperitif by the fire on a stormy night a truly delightful occasion.
The fantastic experience is crowned by the view of Lake Puyehue surrounded by lush green vegetation, an unavoidable postcard found in every corner of Cantarias Lodge.

Aun costado de la ruta 215 que lleva al paso internacional Cardenal Samoré y a Bariloche, se ubica una singular apuesta de turismo y gastronomía en la zona. Revestido con maderas nativas y de una geometría impecable, Lodge Las Cantarias abrió sus puertas a inicios de 2013.
El lodge ofrece variadas actividades para los aventureros y amantes de la vida al aire libre: expediciones de pesca con mosca, kayaking, hiking, trekking, ski y snowboard, todo en el imponente escenario protagonizado por el lago Puyehue y el cordón del Caulle, cadena montañosa de origen volcánico que hizo erupción en 2011, cambiando la fisonomía del lugar.
Uno de los elementos diferenciadores de Las Cantarias es su restaurant. Poseedora de una gran parrilla, sumada a una sencilla decoración que rescata las raíces del sur de Chile y a un chef que entiende y conjuga naturalmente los ingredientes típicos de la zona, conforman una experiencia acogedora y, sobre todo, muy sabrosa.
Para comenzar, exquisitos panes caseros de diferentes harinas y semillas llegan tibios a la mesa para ser untados con un suave hummus de garbanzos. Un aperitivo simple y delicioso. Las Cantarias cuida los detalles: cada plato viene decorado con una florcita autóctona o un helecho, pequeños guiños que te hacen recordar que estás en pleno bosque nativo, rodeado por pellines, hualles y arrayanes.
En el restaurant la carta se renueva constantemente y la frescura de los ingredientes es un imperativo. El salmón glaseado con miel y sésamo acompañado con risotto al funghi es sencillamente fascinante a la vista y al paladar. La miel de ulmo tan característica de la zona se amalgama a la perfección con el pescado, siendo las setas las encargadas de darle carácter a la preparación. En general los más apetecidos en el menú son los que contienen pescados -salmón, trucha y merluza austral-, como también carne de vacuno, producto emblemático de la región.
En algunas ocasiones el chef invita a los comensales a su cocina para que lo ayuden a preparar el pedido; experiencia entretenida y diferente para los curiosos que buscan explorar sus dotes culinarios.
Además del restaurant, en la planta baja hay una barra proveniente de un gran tronco, coloridos telares de lana cruda chilota y una chimenea de piedra volcánica, material que predomina en los lagos de la décima región. Tomarse un aperitivo en una noche lluviosa al lado del fuego es un verdadero deleite. Esta fantástica experiencia se corona con la vista del lago Puyehue, rodeado de una frondosa vegetación, una postal ineludible que se encuentra en todos los rincones de Lodge Las Cantarias.
