RENÉ REDZEPI REINVENTED Nordic cuisine by turning the gardens, forests and coastlines of his native Denmark into the larder for his restaurant Noma – earning two Michelin stars and the title of best restaurant in the world four times. Redzepi, who closed Noma at the end of 2016, has just reopened Noma 2.0 on the outskirts of Copenhagen’s bohemian Christiania district with a seafood-focused menu featuring dishes like this salad of Faroe Islands sea snails and roses.
