Nordic influences haven’t just invaded the design field – its culinary trends, in particular, have taken the food world by storm as well. Famed for its freshness, wholesomeness and focus on sustainability, Scandinavian cuisine is a meticulous study of seasonal, nature-inspired delicacies with a touch of minimalism. Luckily for local epicureans, it’s no longer necessary to hop on a flight to get a taste of the region. Located far from the tourist trail is Salt Recipes – a Scandi-influenced restaurant operated by Homeless that’s an intimate slice of heaven, hidden comfortably inside the brand’s lifestyle store in Yuen Long’s Yoho Mall.
The casually stylish dining space is swathed in a subdued colour scheme highlighted by spartan textures and raw stone, and is fully furnished in Normann Copenhagen furniture and accessories. The decor sets a promising note for the delectable dishes to come. To enhance the freshness and aesthetics of each dish, the team (led by head chef Eric Lau) offers up a selection of fine sea salts – Himalayan pink salt, Hawaiian black lava salt, Bretagne grey salt, Persian blue salt, Hawaiian volcanic red clay salt and Danish smoked salt. Each contains rich trace minerals such as iron, iodine and manganese to elevate the delightful flavours.

悠閒時尚的用餐區以低調和諧的用色裝飾,並以純樸質感和石材的原始魅力突顯效果。餐廳上至燈具、下至桌椅和裝飾均為Normann Copenhagen的出品,奠下自然而不做作的北歐格調,為緊接而來的美食菜式埋下引子。為帶出美食鮮味並增添美學效果,由總廚Eric Lau統領的專業團隊更仔細挑選出六款重點天然海鹽烹調美食,包括喜瑪拉雅粉紅岩鹽、夏威夷黑熔岩鹽、法國布列塔尼灰鹽、波斯藍岩鹽、夏威夷火山紅粘土鹽和丹麥煙燻鹽,含豐富礦物質和鐵質,更能提升味道層次。
"We firmly believe that fresh, seasonal produce is the key to a heart-warming meal," explains Eric. "Instead of utilising lavish ingredients, we work with simple elements like seafood – one of the highlights at our restaurant – that can be easily found in everyday life. I wouldn’t brand what we produce here as ‘authentic Scandinavian cuisine’ – after all, we are not originally from any Nordic countries. But what we strive to achieve here is translating the Scandinavian mentality into gastronomic creativity that caters to local diners’ tastes and preferences throughout the different seasons."
