Sean: My favourite cocktail at The Dead Rabbit is the Psycho Killer, which was created by our head bartender, Jillian Vose. It’s an extremely clever take on a Boulevardier, incorporating 12-yearold pot still Irish whiskey, Campari, cacao and banana liqueur, and aromatic bitters.
