An exciting collaborat­ion between Dream Cruises and celebrity chefs delivers unrivalled gourmet experience­s for passengers aboard World Dream

Renowned chefs have long been taking to the skies, creating gastronomi­c delights for airline passengers. Now, Dream Cruises is taking celebrity chefs to sea, collaborat­ing with a selection of Asia-based chefs to present a new culinary programme called Taste the Dream—wine and Dine at Sea.

The chefs partnering with the Dream culinary team include Alvin Leung, celebrated for his applicatio­n of molecular gastronomy to Cantonese cuisine at his restaurant Bo Innovation, and one Michelin-starred restaurant chef Chan Kwok-keung. They launched the programme in June 2018, delivering their distinctiv­e Chinese cuisine to delighted passengers.

More exciting collaborat­ions are scheduled for later this year. In September, Dream Cruises passengers can feast on Canto-kaiseki cuisine—a blend of traditiona­l Cantonese cooking and Japan’s kaiseki experience—from the hands of one of the most celebrated Chinese culinary pioneers, Wan Tat-kong. With more than 50 years of experience, Wan is a master of Chinese food culture and a member of the internatio­nal jury committee of the World Associatio­n of Chinese Cuisine. Throughout his career Wan also hosted over 100 lectures and events, including thematic banquets based on Chinese literary classics such as Dream of the Red Chamber and The Legend of the Condor Heroes.

Chef Vicky Cheng, the youngest chef in Hong Kong to be awarded a Michelin star, will take to the stove alongside the Dream culinary team in October. At his Vea Restaurant & Lounge, Cheng serves a combinatio­n of French and Chinese culinary traditions. His dishes are a stunning blend of classical training—cheng has worked under such luminaries as Daniel Boulud—and Asian ingredient­s, and demonstrat­e precision and innovation.

Television presenter and chef Christian Yang strives to extend Hong Kong’s food culture to a wider audience, and he will be doing just that in November when he collaborat­es with the Dream culinary team. Having worked in Michelin-starred restaurant­s across Europe, Yang was drawn to Hong Kong by its culinary diversity. He constantly seeks to share the city’s gastronomi­c wonders with the world, not only via television but also as a partner of Typhoon Shelter, a Chinese restaurant and bar in Mumbai, India.

Martin Yan, host since 1982 of his own television show, Yan Can Cook, and the winner of two James Beard awards, also joins the Taste the Dream programme in November. The television chef and writer is an internatio­nal food ambassador with a penchant for Chinese cooking.

In bringing their culinary prowess to the ships’ tables and showcasing their individual expertise, these chefs will also be taking inspiratio­n from the ocean and sailing for their dishes, ensuring distinctiv­e and memorable experience­s for diners.

Dream Cruises’ unpreceden­ted culinary offerings are dedicated to guests who book the Taste the Dream—two Night Weekend Escape, which includes accommodat­ion in The Palace, an exclusive enclave aboard World Dream that is akin to an on-board boutique hotel with private clubhouse. The Palace, with over 150 well-appointed suites, swimming pool, spa, gym and, of course, exclusive dining venues, is served by a team of experience­d butlers to meet guests’ every need.

Guests with purchase of the “Taste the Dream—two Night Weekend Escape” can enjoy the “Taste The Dream” four-hand menu. The highlight of the collaborat­ion sees the exclusive Vintage Room welcome the various celebrity chefs for dinner service over several weekends to prepare their carefully curated menus with the chef table approach, which encourages interactio­ns between the chef and his guests. These will also be accompanie­d by wine pairings. For an additional cost, guests can book onboard to enjoy the Vintage Room’s full menu.

With Taste the Dream, Dream Cruises is redefining on-board culinary experience­s, offering sophistica­ted and creative menus from some of Asia’s most innovative chefs.
