Big Blu Dou­ble Sauce Burger

IN­GRE­DI­ENTS

300g beef mince

10g onion

5g gar­lic

5g pars­ley

1ea eggs

10g salt

8g black pep­per 2ea lemon juice 50ml oil for grilling

For the burger:

100g let­tuce

100g toma­toes

50g red onion

50g gherkins

2ea sliced ched­dar cheese

2ea burger buns

METHOD:

For the burger Patty:

Dice onions and gar­lic then sauté for 5 min­utes Add in the pars­ley and sea­son­ing, then re­move mix from stove and chill in the fridge

Add chilled mix into beef with re­main­ing in­gre­di­ents

Di­vide into 120g pat­ties

Grill pat­ties at high heat on each side for 5 min­utes

Layer burger to your lik­ing, add mush­room sauce

For the mush­room sauce:

100ml cream

10g shal­lots

3g oil

4g gar­lic finely chopped

4g sea salt

10g mush­rooms

5g dark soy sauce 50ml white wine

METHOD:

Dice shal­lots, gar­lic and mush­rooms then sauté

Add white wine to Deglaze, then re­duce por­tion by 1/2 of the amount

Add in cream and re­duce por­tion by 1/3 of the amount

Add in sea­son­ing, stir, then add dark soy sauce

Re­move sauce from heat and serve
