Big Blu Double Sauce Burger

INGREDIENT­S

300g beef mince

10g onion

5g garlic

5g parsley

1ea eggs

10g salt

8g black pepper 2ea lemon juice 50ml oil for grilling

For the burger:

100g lettuce

100g tomatoes

50g red onion

50g gherkins

2ea sliced cheddar cheese

2ea burger buns

METHOD:

For the burger Patty:

Dice onions and garlic then sauté for 5 minutes Add in the parsley and seasoning, then remove mix from stove and chill in the fridge

Add chilled mix into beef with remaining ingredient­s

Divide into 120g patties

Grill patties at high heat on each side for 5 minutes

Layer burger to your liking, add mushroom sauce

For the mushroom sauce:

100ml cream

10g shallots

3g oil

4g garlic finely chopped

4g sea salt

10g mushrooms

5g dark soy sauce 50ml white wine

METHOD:

Dice shallots, garlic and mushrooms then sauté

Add white wine to Deglaze, then reduce portion by 1/2 of the amount

Add in cream and reduce portion by 1/3 of the amount

Add in seasoning, stir, then add dark soy sauce

Remove sauce from heat and serve
