Inferno Smokehouse and Grill was incepted following COVID-19 by Leilani and Leoni Burness. The Suva-based business was establishe­d to employ and empower women.

It now employs nine women.

“We’re visible at Garden City market and the ROC market,” she said.

“From Thursdays to Saturdays, we set up at the Suva City Carpark where we operate among other night store.

“Our baby back ribs are our number one seller,” Ms Burness said.

“We smoke the ribs until it falls off the bone, before we grill it to give a charcoal look.

“It’s served on a bed of chunky cup fries with spicy sriracha mayonnaise.”

Braised Moroccon lambshanks, beef briskets, buffalo chicken wings and loaded turkey legs are among other meaty dishes served up by Inferno Smokehouse and Grill. “We have our social media footprint which puts us on Instagram and Facebook,” Ms Burness said.

“We have a website too.”

What is one place in Fiji you would take visitors to, and why?

I’m from Lomaiviti so I would definitely recommend that as a first.

Secondly, the Yasawas via South Sea Cruises.

There are alot of resorts there too.

Check out the Blue Lagoon region, torquiose blue waters, a picture post card image of Fiji.

The range of activities include the Sawailau caves, shark diving, and mazes to swim through if you are a diver.

What is your favourite spot for a coffee or pie, and why?

The Cake Tin probably has the best cakes and pies.

And Eleina McDonald’s mum, who makes the best red velvet cupcakes.

I don’t drink coffee, but for a hot chocolate, it’s Mana Coffee.

What is your favourite secret backyard spot, and why?

My zen is to go camping at Natadola beach. You open up your tent in the morning, and youre stepping out on that white sandy beach.

It’s one of the top beaches in the world right at your feet, you wake up, look outside, go and have a swim, its peaceful.

What is the one place in Fiji that’s on your bucket list and why?

I’d love to climb up the mountains of Taveuni to see the tagimoucia, the red prawns of Vatulele.

I like visiting places that have a rich history, with myth and legend behind it.

Fiji has a lot of hidden gems like that.
