Diving at Somosomo Strait, Bligh Waters to Hiking in Taveuni
Vittoria Pasca is a qualified nutritionist who moved from Rome to Fiji in 2017 and has constantly sought new ways to motivate consumers towards healthier eating choices.
The founder and owner of Healthy Eating is expected to launch a new cookbook before Christmas to add to her edition.
Her cookbook, Vegan Healthy and Creative Cooking with Pacific Plants, was awarded the winner in the South Pacific category for this year’s Best in the World Gourmand Awards – an international competition for cookbooks from all over the world.
“In the beginning I had a lot to learn, in particular about food photography and printing, but I’m glad I did it as I already have a couple of ideas for new projects and now, I know what to do,” Ms Pasca said.
How many places have you been around Fiji?
Originally from Rome, I’ve been living in Fiji since early 2017 and was very lucky to be able to do quite a bit of travel around this beautiful country. I’ve been travelling around Viti Levu, Vanua Levu, Taveuni, Kadavu, Yasawa and Mamanuca, Ovalau and once I did a trip with the NAIA all the way to Wailagilala in Lau. Amazing places!
What is one place in Fiji you would take visitors to and why?
It really depends on what they like. Here in Fiji I took up diving and did some amazing dives, especially around the Somosomo Strait, Bligh Waters and Namena reserve. So, I would definitely recommend all these places to anyone interested in diving. Fiji’s famous soft corals are really special!
Favourite place for coffee or pie and why?
I live in Suva and for a short and strong espresso (Italian style!) My favourite spot is Farmer’s daughter near Victoria Courts. For a delicious vegan cake I’d go to Health Veggie Restaurant in Flagstaff. Sun Smiles cafe at FNPF has some great meatless pies too.
Favourite backyard spot and why?
I’ve been to Taveuni a few times and love going back there for some great diving or hiking.
What is one place in visit?
I’ve been to Savusavu a few times but never to the rest of Vanua Levu. I’d like to go to Labasa and do a tour of the island, including some diving around the Great Sea Reef.
