Dhal Stuffed Roast Chicken

Ingredients:
For the dhal stuffing:
• 6 cups of FMF dhal (boiled until soft)
• 2 tablespoons oil
• 1 tablespoon of jeera
• Half a tablespoon of dried chillies
• 6 cups of breadcrumbs
• 2 tablespoons of butter
• 1 egg
• 1/2 cup chopped coriander
• Salt and pepper to taste
For the roast chicken:
• 2 tablespoons of honey
• one tablespoon of light soy sauce
• 2 tablespoons of oyster sauce
• salt and pepper to taste
• 1 whole chicken
Method:
For the dhal stuffing:
1. In a pan, heat then add the oil. Add jeera and dried chillies.
2. Cook the spices and add the dhal.
3. Add the salt and pepper to taste and cook the dhal for 20 minutes or until golden brown.
4. In a separate pan, add the butter and cook until its brown in colour, mix in the breadcrumbs and cook until well combined.
5. Combine the dhal mixture and the breadcrumbs in a bowl and add the egg. Mix until well incorporated.
6. Stuff the chicken with the dhal mixture and place the left-over dhal mixture into a greased pan and bake for 20 minutes in a preheated heated oven (180 degrees Celsius) or until golden brown.
For the roast chicken:
1. In a greased oven tray, place the chicken.
2. Add the light soy sauce, oyster sauce, honey, salt, and pepper in a bowl and mix until well combined.
3. Baste the chicken well and stuff the chicken with the dhal mixture and bake at 180 degrees Celsius for an hour or until the chicken is cooked thoroughly.
4. Baste the chicken continuously while baking. Source: FMF Foods Limited
