Dhal Stuffed Roast Chicken

Ingredient­s:

For the dhal stuffing:

• 6 cups of FMF dhal (boiled until soft)

• 2 tablespoon­s oil

• 1 tablespoon of jeera

• Half a tablespoon of dried chillies

• 6 cups of breadcrumb­s

• 2 tablespoon­s of butter

• 1 egg

• 1/2 cup chopped coriander

• Salt and pepper to taste

For the roast chicken:

• 2 tablespoon­s of honey

• one tablespoon of light soy sauce

• 2 tablespoon­s of oyster sauce

• salt and pepper to taste

• 1 whole chicken

Method:

For the dhal stuffing:

1. In a pan, heat then add the oil. Add jeera and dried chillies.

2. Cook the spices and add the dhal.

3. Add the salt and pepper to taste and cook the dhal for 20 minutes or until golden brown.

4. In a separate pan, add the butter and cook until its brown in colour, mix in the breadcrumb­s and cook until well combined.

5. Combine the dhal mixture and the breadcrumb­s in a bowl and add the egg. Mix until well incorporat­ed.

6. Stuff the chicken with the dhal mixture and place the left-over dhal mixture into a greased pan and bake for 20 minutes in a preheated heated oven (180 degrees Celsius) or until golden brown.

For the roast chicken:

1. In a greased oven tray, place the chicken.

2. Add the light soy sauce, oyster sauce, honey, salt, and pepper in a bowl and mix until well combined.

3. Baste the chicken well and stuff the chicken with the dhal mixture and bake at 180 degrees Celsius for an hour or until the chicken is cooked thoroughly.

4. Baste the chicken continuous­ly while baking. Source: FMF Foods Limited
