«Yquem 2005, a wine of ex­cep­tional ele­gance and re­fine­ment, blos­soms per­fectly on a roasted turkey, driz­zled with a blend of honey and or­ange juice, ac­com­pa­nied by mashed sweet pota­toes and

chest­nuts. spicy with car­damom. The sweet­ness and scents of candied fruit from the wine are the per­fect an­swer to the crisp­ness of the out­side

and the mel­low in­te­rior of the turkey por­tion. The ap­proach to the tex­ture of the two purées seems ob­vi­ous, but it should be noted that the slightly tan­nic con­sis­tency of the brown­ing par­tic­u­larly high­lights the har­mony and fi­nesse of the mouth of Yquem.
