On p42, we find out how to create a pop-up restaurant at Everest Base Camp (it requires ingenuity, pumpkins and a low-flying drone). On p46, we meet the people coming together to forge a new identity for the world’s Chinatowns. Meanwhile on p56, we – well, I – discover the waters of Valencia (pictured): the many ways water has shaped, and in turn been shaped by, Spain’s third city.
