TASTE OF WINTER FRESHNESS AT CASSIA
From now until 29 February 2020, Cassia, Capella Singapore’s fine dining Chinese restaurant, presents a new winter menu that showcases refined traditional Cantonese flavours blended with elements from other regional cuisine and contemporary inspiration. Cassia’s Executive Chef Lee Hiu Ngai focuses on freshness in this menu, which is highlighted by an assortment of produce like vegetables, fish, and lamb. The tender Baked Cod Fish with Bonito Sauce and Seasonal Greens is a sweet and pleasantly textured light dish, while the Braised Fish Maw with Whole Japanese Flower Mushroom, Broccoli and Wolfberries hits the right notes with its beautiful presentation and delicate flavour. The Deep-fried Spiced Lamb Chop will perhaps elicit the most oohs and ahhs when it arrives with its sculptural form, as well as the ingenious fish paste stuffing and drizzle of tangy barbecue sauce.
