The Chairman is a true symbol for Hong Kong, a champion for our finest culinary traditions and the people behind the city’s unique produce. Over the past decade, chef-owner Danny Yip has tended to stay modest and out of the spotlight; indeed, the restaurant itself has always been incredibly unshowy with its blank canvas design, with the real stars of the show being the food. Over the last year or so, we’ve sensed a revving up of ambition and a new energy pervading The Chairman—the latest new menus are full of solidly executed dishes that take a lot of time and quality sourcing to achieve that next-level flavour. Take, for example, the king prawns cooked in fish and rice broth with peppered prawn heads, or the camphor-smoked duck whose smoky fragrance lingers long on the palate. With so much knowledge and talent in the kitchen, The Chairman is bound to further uplift the profile of contemporary Cantonese cuisine around the world.
