The restaurant occupies two floors, though each room is petite, with clean lines and a simple crystal chandelier that brightens the restaurant. The Chairman’s strength lies in its seafood dishes, prepared with premium quality ocean catches and well-handled timing—one must indulge in its signature steamed fresh flower crab with aged Shaoxing wine, together with razor clams steamed with aged lemon and mixed herbs; and king prawns cooked in fish and rice broth with peppered prawn heads.
