10 years is not a short period of time for independent restaurants such as The Chairman, with its lofty goals of promoting MSG-free Cantonese cuisine through exploration of old recipes and classic dishes and reinventing them in contemporary form. The restaurant occupies two floors, though each room is petite, with clean lines and a simple crystal chandelier that brightens the restaurant. The Chairman’s strength lies in its seafood dishes, prepared with premium quality ocean catches and well-handled timing—one must indulge in its signature steamed fresh flower crab with aged Shaoxing wine, together with razor clams steamed with aged lemon and mixed herbs; and king prawns cooked in fish and rice broth with peppered prawn heads.
