High above the bustle of Mong Kok, this elegant Cantonese outlet offers a refined, contempora­ry take on traditiona­l cuisine. Technical precision and understand­ing of Cantonese flavours are showcased in an appetiser of grilled eel, where the sweetness of the glaze is subtly offset by the earthy, herbal notes of Chinese angelica; the skin is lightly charred and beautifull­y crisp while retaining the juices. The garouper with red dates and shiitake is another example, where umami and a hint of sweetness come together seamlessly in a moreish claypot. The double boiled whole pigeon soup with fish maw is soothing, crystal-clear, and full of delicate umami. The key ingredient­s themselves sometimes lack the sweetness of fresh produce, however, which is unfortunat­e, as the cooking is spectacula­r. The wine cellar has always been a focal point at Ming Court and while it’s no longer the only Chinese restaurant with a decent wine list, it continues to stand out with a wide range of choices from lesser-known producers.
