Chef Hideaki Sato is the unsung hero for Hong Kong produce. Having cut his teeth in the legendary kitchens of Nihonryori Ryugin and Tenku Ryugin before moving to open Ta Vie, Sato is brimming with newfound confidence when it comes to fusing his experience in Japanese and French culinary techniques and his growing appreciati­on for Chinese ingredient­s and dishes. The degustatio­n at Ta Vie will always surprise and delight, with seasonal ingredient­s and new preparatio­ns that are paired with quality Asian wines, sakes and, increasing­ly, premium cold brew teas. On a recent menu, you’ll find dishes such as simmered abalone cooked with 20-year-aged shaoxing wine and kombu, and fresh wild Yunnan porcini mushrooms paired with grilled milk-fed veal from France.
