Having cut his teeth in the legendary kitchens of Nihonryori Ryugin and Tenku Ryugin before moving to open Ta Vie, Sato is brimming with newfound confidence when it comes to fusing his experience in Japanese and French culinary techniques and his growing appreciation for Chinese ingredients and dishes. The degustation at Ta Vie will always surprise and delight, with seasonal ingredients and new preparations that are paired with quality Asian wines, sakes and, increasingly, premium cold brew teas. On a recent menu, you’ll find dishes such as simmered abalone cooked with 20-year-aged shaoxing wine and kombu, and fresh wild Yunnan porcini mushrooms paired with grilled milk-fed veal from France.
