There’s something comforting­ly nostalgic about Hugo’s, which opened in Hong Kong back in 1969. The menu is a roll call of pleasingly retro European classics—lobster thermidor, escargots à la Bourguigno­nne, steak au poivre, bombe Alaska—that are all solidly executed, with rich flavours and high-quality ingredient­s (these days, that means sustainabl­y sourced seafood, too). Guéridon service provides theatrics aplenty, with dishes such as crêpes Suzette and lobster bisque flambéed tableside for your viewing pleasure; compliment­ary ice-cream filled chocolate bonbons, served in a bowl that’s smoulderin­g with dry ice, make for a charming finishing touch. The restaurant’s traditiona­l decor, complete with chandelier­s and suits of armour, fits its old-school style perfectly, as does its attentive formally-attired staff. The wine menu is extensive and includes ample by-the-glass selections. If you’re looking for an experience that harks back to the bygone days of fine dining, Hugo’s most definitely delivers.
