One of Hong Kong’s most thrilling dining destinations, with zero similarity to what traditional fine dining is expected to be. May Chow’s culinary tribute to her Chinese heritage has come leaps and bounds since opening in 2017; to understand Happy Paradise is to unabashedly embrace the chaotic, neon-lit den that it is and appreciate the accomplished cooking that comes through the pass. Taking inspiration always from her experiences, Chow has introduced dishes such as garam masalaspiced char siu and egg tacos; turmeric salt and pepper okra with a curry leaf mayo; and raw scallop with black garlic puree, white fungus and mung bean noodles. The cocktail list, which includes many local references such as lemon tea and five spice, are a joy to discover.
