The hotel restaurant pays homage to Shunde with only one pithy page—just eight dishes—from the old culinary capital of the Pearl River Delta. The rest of the menu serves up pan-Chinese classics such as Peking duck, as well as more contemporary fare. Deepfried spicy beef is a stunning starter, with succulent cubes of beef coated in crushed nuts for a cordial crunch with some shimmering heat from Sichuan peppercorns. One Shunde standout is the stir-fried fish noodle, featuring fresh fish that’s hand-minced and rolled into satisfyingly squidgy strands, generously flavoured with the briny umami of dried sole.
