Wan Chai’s Sichuan Lab is a testing ground for experiment­ing with the possibilit­ies of reinterpre­ting and modernisin­g the famed mala-spice cuisine—and the result is as uplifting as the sensations offered in each course. The casual setting invites a younger audience, with a mixology bar and an Instagram-friendly colour contrast in its interior design. The restaurant serves all the Sichuan classics with a twist, both in interpreta­tion and in adoption of global ingredient­s. The poached mandarin fish slices in chilli broth is sharp and fiery, while the steamed chicken with spicy sauce is elevated with golden century egg and the deep-fried mochi is served with Okinawan black sugar. Sichuan Lab offers a handful of creative cocktails with Chinese tea infusions. The restaurant also runs a reservatio­nsonly private-kitchen dining experience on request, featuring a unique bespoke menu for guests.
