Wan Chai’s Sichuan Lab is a testing ground for experimenting with the possibilities of reinterpreting and modernising the famed mala-spice cuisine—and the result is as uplifting as the sensations offered in each course. The casual setting invites a younger audience, with a mixology bar and an Instagram-friendly colour contrast in its interior design. The restaurant serves all the Sichuan classics with a twist, both in interpretation and in adoption of global ingredients. The poached mandarin fish slices in chilli broth is sharp and fiery, while the steamed chicken with spicy sauce is elevated with golden century egg and the deep-fried mochi is served with Okinawan black sugar. Sichuan Lab offers a handful of creative cocktails with Chinese tea infusions. The restaurant also runs a reservationsonly private-kitchen dining experience on request, featuring a unique bespoke menu for guests.
