Opened by chef-patron Franco Pepe, this Central pizzeria is a big deal among the local Italian community. Known for ranking among the world’s best pizza lists, Pepe’s eponymous restaurant was the blueprint for this Hong Kong opening. The space, located across the historic Tai Kwun complex, boasts an oasis of a terrace that is resplenden­t with lemon trees and wood furniture; on a sunny but cool day, this is where you’ll want to be sipping a chilled white wine with your pizza. Made using a mix of custom-milled organic flour and Pepe’s own brewer’s yeast, the pizza bases here are fluffy and chewy, and full of flavour; the signature Margherita Sbagliata, under the ‘Creazioni’ section, is his family recipe, with luscious lashings of Riccio tomato sauce, a reduction of basil, mozzarella di bufala Campana DOP, and extra virgin olive oil—a lesson in how to innovate the classics. An oreganoric­h Classico piccante pizza topped with fior di latte, tomato and spicy salami is equally devourable.
